Who doesn’t love a good ol’ freshly baked cookie? I, for one, will never deny the opportunity to indulge! A friend of mine asked me to bake cookies and his only other request was simple: must have Nutella.

We know I’m a sucker for experimenting with Nutella-based recipes, and so I was quick to oblige! I raided my pantry for ingredients to this great recipe on Family Spice. For more:

These instructions are straight from the site:

  1. Preheat oven to 350ºF.
  2. Using a stand mixer, whisk until light and fluffy:
    • 1 1/2 cup butter, unsalted , room temperature
    • 3/4 cup brown sugar, light , packed
    • 3/4 cup granulated sugar
  3. Mix in:
    • 1 cup Nutella
  4. Scrape down sides to ensure even mixing.
  5. Mix in, one at a time:
    • 2 eggs, large
  6. Mix in:
    • 1/2 tsp vanilla extract
  7. In a separate bowl whisk together:
    • 2 cup all-purpose flour
    • 2 TBS all-purpose flour
    • 1/4 cup cocoa powder, unsweetened
    • 1/2 tsp baking soda
    • 1/2 tsp salt
  8. In batches, mix dry ingredients into wet until fully incorporated.
  9. By hand, fold in:
    • 1/2 cup hazlenuts , chopped
    • 1 cup chocolate chips, semi-sweet
  10. Drop cookies by rounded tablespoonfuls onto ungreased baking sheet or line a baking sheet with parchment paper for easy removal.
  11. Bake for 10-12 mins, or until golden brown.
  12. Let cookies rest in the baking sheet for one minute, then using a spatula place onto a cooling rack to cool completely.

So good! These reminded me a lot of the Felix & Norton variety – super soft and chewy, with a great Nutella flavour. My only regret is that I didn’t take the time to take some quality pics for these gourmet quality cookies! Ok, one more regret: I should’ve hid some for safe-keeping from my monster brothers! ❤ ❤ ❤ xo
